We just had what geninne refers to as "mexico in a bag". We added some double yolked fried , once over easy, organic eggs, monterey jack cheese, fresh cilantro and avocado. I was a little worried that it would be a tad too spicy for my daughter's taste, but she said it was delicious.
Thank you so much for popping that into my luggage. Next time I will be making it from scratch. One thing some of you may not know about geninne is that she is a really fantastic culinary artist as well. Maybe one day she will write and illustrate her own book of recipes.
