well i have better night vision, my hearing has improved and my nose is cuter and wiggles

i guess that is what happens when you eat like a rabbit :)
But really since eating a diet of almost entirely plant based nutritious foods for about 7 weeks now has had some significant effects of me. I feel stronger, have more mental clarity, sleep longer and more soundly, wake up refreshed and ready to face the day. I have less joint pain and stiffness. I have been told my skin is glowing and I have noticed my hair is healthier. I have lost about 12 lbs and I am eating great amounts of food.
I am not eating dairy products, meat or wheat. I have not given up coffee but only consume it in the morning with either almond or coconut milk. The rest of the day I drink herbal and green tea mixtures. I still have the occasional glass of wine.
My breakfast is either a chia based cereal with the addition of nuts , seeds and berries or a slice of life changing bread from the my new roots blog , toasted with some nut butter and banana. Lunch is a rather huge salad of mixed organic baby greens that vary from day to day and various additions that might include, seeds, nuts, beans or chickpeas. I usually use a very light asian style dressing.
Suppers have been fun in that I have been trying out so many new delicious vegan recipes I find on line or in magazines. I also have a tendency to look at what ingredients I have on hand and invent new recipes on the spot. I have posted almost all of the results on instagram #nutritarian. I have no intention of turning this blog into a cooking blog. I have also started a nutritarian recipe category on my pinterest account.
I am not fanatical in anyway. I do plan to add organic eggs to my diet on occasion and I also plan to eat fresh sustainable fish when available. I do think this way of eating would be of benefit to anyone if they wanted to give it a try.
The only supplements I take are vitamin D3 and vitamin B12.
